Wonderful veggie pizza!

Last night, Rusty and I made a wonderful veggie pizza! It was something that my mom used to make when I was a kid. Knowing my mom, you wouldn't be surprised for me to tell you that when she made it, it was more like a double decker pizza. Ours would have been that big, but we had to cut the squash out of respect for Rusty's strong distaste and the red pepper that we bought had mold in it...blah!!! (must be more careful when selecting peppers from the Kro-ghetto as our Kroger is affectionately called...) So, here is our lovely pizza and a short recipe for those of you who are interested :)

Amazing Veggie Pizza

Make pizza crust or buy one (Rusty and I love the make your own pizza crust...i.e. add boiling water to the pizza crust mix, let it rest and spread out on pizza pan)

Saute veggies of your choice in a splash of olive oil until they are cooked. Veggies to include: 1 zucchini, 1/2 chopped onion, small head of broccoli florets, red, orange, yellow peppers (preferably not mold-y ones). Add salt, pepper and a couple splashes of thyme.

Prepare crust, add pizza sauce, sprinkle on veggies, add mozzarella cheese and heat.

Cut in slices and enjoy!! :)
