Oh, yes, we are the champions of the first ever Commercial Kentucky Christmas chili cook off! :) Rusty did a great job making our taco soup, or should I say, our Screamin' Texan Chili! We dumped it all in the crock pot on Saturday night and let it cook all day Sunday.
At the cook off, there were 13 different chilies...and they all were different! Who knew there could be that many different chilis? I expected all of them to be the McCormick spice pack chilies, but no, they were spicy, noodly, sweet, beer flavored, etc. Crazy times, huh? Well, everyone took their mugs and tried out all the chilis and put in their votes. Once they were all tabulated, we were the lucky winners of the grand prize (cash, grand prize!)! :) So, ladies and gentlemen, here is the winning recipe. Don't be fooled by the simplicity...it is wonderful, as proved by our stunning win last night!
Screamin' Texan Chili (aka Taco Soup)
ingredients:
1 can corn, drained
2 cans Ranch beans, not drained
1 can black beans, drained
3 cans Rotel original tomatoes and chilis, not drained
16 oz. Ortega (yes, it has to be Ortega) taco sauce, Medium
1 package Ortega taco seasoning
1 1/2 - 2 pounds hamburger
1/4 tsp. chili powder
1/4 tsp. red peper flakes
salt to taste
toppings: Cheese, sour cream, tortilla chips
directions: Cook hamburger until done, cook in taco seasoning as directed on packet. Dump all of your ingredients into the crockpot. Simmer on low all day, or on high for 3-4 hours, or on the stove long enough to get it hot. Spoon out into bowls, top with toppings as desired. (chips should be either crunched into the soup or left whole to dip out the soup.)
So, sometimes simplicity is the best. Enjoy the soup/chili and I'll try to get some pictures, though I'm not sure our left overs will still be there when I get home tonight... :)
